Phở xuất hiện từ khi nào?
Các tư liệu lịch sử nhìn chung cho rằng phở hiện đại xuất hiện ở miền Bắc Việt Nam vào đầu thế kỷ 20, đặc biệt là tại Hà Nội và Nam Định. Một số tư liệu cho thấy phở đã được những người bán hàng rong bán tại Hà Nội vào khoảng năm 1907–1910.
Một giả thuyết: Từ Bún Xáo Trâu đến Phở
Một trong những giả thuyết về nguồn gốc của phở cho rằng món ăn này có thể phát triển từ bún xáo trâu, một món ăn truyền thống của miền Bắc Việt Nam gồm bún, nước dùng được ninh từ xương trâu, hành hoa, rau răm và một lượng nhỏ thịt trâu.
Theo giả thuyết này, bún xáo trâu từng được bán tại các bến đò và dọc theo bờ sông Hồng, đặc biệt phục vụ người lao động và những người làm công việc khuân vác.
Theo thời gian, một số người bán được cho là đã thay bún bằng những lát bánh cuốn thái mỏng, rồi sau đó thay thịt trâu bằng thịt bò khi thịt bò trở nên phổ biến hơn. Việc sử dụng xương bò có thể cũng góp phần vào sự hình thành của loại nước dùng đậm đà gắn liền với phở.

Tên gọi “Phở” bắt nguồn từ đâu?

Oxford Advanced Learner’s Dictionary hiện đã đưa phở vào từ điển như một danh từ tiếng Anh và ghi nhận nguồn gốc của từ là tiếng Việt, đồng thời lưu ý rằng từ này có thể có liên hệ với từ tiếng Pháp feu.
Từ Phở Bò đến Phở Gà
Phở thời kỳ đầu chủ yếu gắn với phở bò. Các tư liệu lịch sử cho thấy phở chín xuất hiện trước, trong khi phở tái xuất hiện sau đó khi những người bán và người nấu ăn phát triển thêm những cách chế biến và phục vụ thịt bò.
Đến khoảng những năm 1930, phở đã trở nên phổ biến tại Hà Nội.

Năm 2024, phở Hà Nội và phở Nam Định được đưa vào Danh mục Di sản văn hóa phi vật thể quốc gia của Việt Nam, thuộc loại hình tri thức dân gian.
Sự ghi nhận này không chỉ dành cho bản thân món ăn, mà còn phản ánh những kỹ năng, kỹ thuật, tập quán và cách thưởng thức phở đã được truyền lại qua nhiều thế hệ.
Ngày nay, phở có mặt từ những quán nhỏ bên đường cho đến các nhà hàng ở nhiều nơi trên thế giới. When Did Phở Appear?
Historical records generally place the emergence of modern phở in Northern Vietnam in the early 20th century, particularly around Hanoi and Nam Định. Records indicate that phở was already being sold by street vendors in Hanoi around 1907–1910.

One theory about the origins of phở traces its development back to bún xáo trâu, a traditional Northern Vietnamese dish made with rice vermicelli, broth simmered from buffalo bones, scallions, Vietnamese coriander, and a small amount of buffalo meat.
According to this theory, the dish was once sold around ferry terminals and along the banks of the Red River, particularly to workers and porters.
Over time, some vendors are said to have replaced the vermicelli with thinly sliced bánh cuốn, and later replaced buffalo meat with beef as beef became more readily available. The use of beef bones may have contributed to the development of the rich broth associated with phở.
This is only one of several theories about the origins of phở. It therefore should not be treated as a definite historical conclusion. However, it offers an interesting perspective on how familiar ingredients and existing food traditions may have gradually developed into a new dish.
Where Does the Name “Phở” Come From?
The origin of the word “phở” is still debated.
One widely discussed theory connects it to the French dish pot-au-feu, a slow-cooked beef dish.
Another theory links it to the Cantonese term ngưu nhục phấn, referring to beef with rice noodles.
A third theory connects the name to the Vietnamese dish xáo trâu, traditionally made with buffalo meat and noodles.
The Oxford Advanced Learner’s Dictionary now includes phở as an English noun and gives its word origin as Vietnamese, while noting that it may be connected to the French word feu.
From Phở Bò to Phở Gà
Early phở was primarily associated with phở bò, or beef phở. Historical accounts indicate that phở chín came first, while phở tái appeared later as vendors and cooks developed new ways of preparing and serving beef.
By around the 1930s, phở had become widely established in Hanoi.
Phở gà, or chicken phở, appeared later. A commonly cited account places its emergence around 1939, when beef was reportedly unavailable in Hanoi markets on Mondays and Fridays, encouraging phở vendors to use chicken instead.
While this explanation is widely repeated, the exact circumstances behind the change are not completely documented.
From Street Food to Cultural Heritage
Over time, phở travelled far beyond its northern origins and developed into many regional styles. Hanoi and Nam Định remain especially important to its history and identity.
In 2024, Hanoi phở and Nam Định phở were included in Vietnam’s National Intangible Cultural Heritage List under the category of folk knowledge.
The recognition reflects not only the dish itself, but also the skills, techniques, traditions, and ways of enjoying phở that have been passed down through generations.
Today, phở can be found from small street-side stalls to restaurants around the world. Yet beneath its many variations, it still carries the story of a simple bowl of noodles shaped by rice, broth, local creativity, cultural exchange, and the changing life of Vietnam.
